Week 2
This week was crazy! I can’t believe how fast time is flying by and how much I’ve learned this week. It was more of the same, prepping and plating for service, but this time I’d done everything before, knew where everything was and really gotten into the swing of things, so I did much better the second time around. Trifecta
Three good things that happened today:
1. Everything I made for prep today turned out perfect (don’t have to tell me twice, what whaaaaaaaat.)

I felt like I did everything wrong today, but in hindsight, I suppose it wasn’t that bad. Mostly the fact that I tried for hours to make a good quenelle and still can’t do it is what’s bugging me, but the only thing that will fix that is practice.
